Pumpkin Spice Protein Pancakes

Ingredients

  • 60 g Pancake Mix of your Choice
  • 30 g Slow Churn Vanilla Ice Cream Whey Protein
  • 16 g Pumpkin Pie Protein Cookie Butter
  • 12 g Coconut Flour
  • 4 g Zero Cal Sweetener of your choice
  • 4 g Baking Powder
  • 120 g Canned Pumpkin
  • 100 g Egg Whites
  • 180 g Unsweetened Vanilla Almond Milk
  • Instructions

    1. Add all your dry ingredients into a bowl and mix to avoid clumping. Then add your wet ingredients and mix until there’s a batter with no chunks. Let sit for 5-10 minutes to thicken up a bit more.
    2. Now preheat your stove top pan on a 5/10 heat. Once preheated, spray with non-stick cooking spray and then add 1/5th of your batter to the middle of your pan. Spread out a little with your spoon or cookie scooper like I used. Pancakes should be about 6in.
    3. Let cook on that side until you see around 10 air bubbles coming from the top of the pancake. Now flip and cook on that side for another 2 minutes. Repeat this process for all 5 pancakes and then enjoy!
